Broiled Chilean Sea Bass with Ponzu Sauce at Blue Fin Newport Coast

No dish exemplifies deep flavor and meticulous preparation like the broiled Chilean Sea Bass at Blue Fin in Newport Coast. With this dish, Chef Takashi Abe brings together an artful medley of ingredients which please the palate - and the eye. Expectations are high at this well-known Newport Coast eatery, and this entrée delivers with its subtly sophisticated Japanese flavors and delicate, minimalist presentation.
 
The plate is artfully constructed with two main components: a bed of Japanese Hon Shimeji mushrooms beautifully sautéed in a truffle oil ponzu sauce and a broiled filet of Chilean Sea Bass. The umami developed within the mushrooms is unmistakably delicious and the soft texture of the perfectly prepared Sea Bass leaves the diner wanting more. For practical luxury, the fish is topped with paper-thin slices of black truffle and the plate is finished with bright pink peppercorns.

Crisp Braised Pork Belly at Broadway in Laguna Beach

The Crisp Braised Pork Belly at Broadway by Amar Santa is an original dish with surprising flavor combinations.  The dish is composed of three perfectly prepared thick-sliced pork belly pieces, a banana-sunchoke puree, cocoa nibs, truffle bacon jus, and a Brussels sprout.
 
As one can imagine, when dining at a restaurant which bears the name Broadway, this dish is all about style.  The rich pork belly is beautifully cooked and the banana-sunchoke puree brings a welcomed freshness.  The “cupped” Brussels sprout is blanched flawlessly (to retain its bright color) and filled with truffle bacon jus for an additional level of sophistication.  Each ingredient can be appreciated separately or brought together in various combinations to bring a symphony of flavors to the dining experience.
